Goat Cheese Stuff Lamb Meatballs

- 1 1/2 pounds of ground lamb
- 2 tbsp dry mustard powder
- 2 tbsp chopped fresh thyme ( or 1 tbsp of dry )
- 3 tbsp chopped fresh parsley ( or 1 tbsp of dry )
- 4 cloves of garlic, finely chopped
- 1/2 small sweet onion very finely chopped
- salt and pepper
- 1 sm package of goat cheese
Methods/steps
- Mix all the ingredients (EXCEPT the goat cheese) in a bowl with the lamb. Season well with salt and pepper.
- Cut the goat cheese in small chunks the size of a 1/2 tsp.
- Spoon 2 tbsp of the lamb into your palm, place a piece of cheese into the center and then roll the lamb into a ball.
- Once all the lamb is used, warm a deep dish oven proof pan on medium heat with a touch of vegetable oil.
- Also, pre-heat the oven to 350 F
- Place the lamb balls into the pan and cook so that the bottom turns slightly brown, turn them to the side and repeat until most of the sides are browned.
- Take the pan and place in the pre-heated oven for an additional 15 minutes or until the balls are cooked through and the cheese is melted.
