Goat Cheese Stuff Lamb Meatballs

Description These little meatballs pack a surprise punch of flavor in every bit!  The gooey goat cheese in the middle is absolutely to die for!

  • 1 1/2 pounds of ground lamb
  • 2 tbsp dry mustard powder
  • 2 tbsp chopped fresh thyme ( or 1 tbsp of dry )
  • 3 tbsp chopped fresh parsley  ( or 1 tbsp of dry )
  • 4 cloves of garlic, finely chopped
  • 1/2 small sweet onion very finely chopped
  • salt and pepper
  • 1 sm package of goat cheese
Methods/steps
  1. Mix all the ingredients (EXCEPT the goat cheese) in a bowl with the lamb.  Season well with salt and pepper.
  2. Cut the goat cheese in small chunks the size of a 1/2 tsp.  
  3. Spoon 2 tbsp of the lamb into your palm, place a piece of cheese into the center and then roll the lamb into a ball.  
  4. Once all the lamb is used, warm a deep dish oven proof pan on medium heat with a touch of vegetable oil.
  5. Also, pre-heat the oven to 350 F
  6. Place the lamb balls into the pan and cook so that the bottom turns slightly brown, turn them to the side and repeat until most of the sides are browned. 
  7. Take the pan and place in the pre-heated oven for an additional 15 minutes or until the balls are cooked through and the cheese is melted.
